Freeze it

  • Nov. 3rd, 2009 at 2:39 PM

How can I make the upcoming lenten season a little quieter?

Unlike Great Lent, the Nativity fast falls during a period when many people are extra busy. It seems slightly more difficult to me to approach this season with due reverence and quietude, simply because there is so much to be done. (And there’s not nearly as much on my plate as there is for many others!)

In the interest of simplifying my life during this time, I plan to make extra lenten meals that can be frozen. There are two Wednesdays and two Fridays left before the fast begins for those of us on the new calendar, so why not use those opportunities to make double batches of food? I think I shall–and more besides.

Do you have a favorite lenten recipe that freezes well? Please share it!

This year's halloween was the first time I'm "celebrating" it. I've been lucky to have friends who are game enough to dress up to the nines and suit up with the best costume they can think of, and in return I wanted to bake something fun and freaky for them.

So, for that I give you...

I didn't have a lot of time this year, but it wouldn't be Halloween if I didn't bake something, so:

Happy Halloween Ladies AND Gentlemen!

  • Oct. 31st, 2009 at 4:10 PM

I made eyeball cupcakes to bring into work tonight. I was originally supposed to go to a party, and this is why I bought the supplies, but those plans got ruined..so I didn't want this stuff to go to waste. I bought the gummy eyeballs from target. :)

I hope everyone has a fun Halloween!

Thought I'd share pictures of the cupcakes I made for today. Happy Halloween!

+3 more here! )

The ones with the ice cream cones are supposed to be witches. I've also got mummies, werewolves (the ones with the 4 pieces of candy corn), a spider, and the one that looks like The Thing is pretty much how I got rid of the extra chocolate frosting I had left over, lol.

I am making a batch for my kids school halloween party tomorrow. I want to make something tasty but you got to keep in mind, the target audience is 5 and under. Pumpkin + cream cheese frosting isn't as appealing to a kidlet as say, chocolate. Any suggestions??

In your opinion - the best buttercream

  • Oct. 29th, 2009 at 11:59 AM
Hi, I'm a long time lurker and must say I absolutely love this place. Here's the dilema - I'm making some cupcakes for my boyfriend as we've been together a year now and I wanted to give him something special. So I'm making batman themed cakes, as he's a big fan boy and also it's Halloween so it just seems right. I have the cakes themselves all planned out - chocolate cake, buttercream frosting and a bat made from marshmallow fondant. The idea being that it ends up looking something like the bat signal, I hope! However I am looking for the perfect frosting. I always just use butter, powdered sugar, a bit of vanilla and mix it all up. That's always been tasty but I've been doing a lot of planning for these and reading online (particuarly for the MM fondant as it's my first time trying that) and a lot of the buttercream recipes I've seen suggest some whipped cream or boiling water, one even suggested shortening. So I thought I'd ask here as some of the images posted here look delicious. What is your favourite way to make buttercream frosting? What should I use for the best results?

Any help would be greatly appreciated.

cupcakes as a business??

  • Oct. 29th, 2009 at 5:01 PM
So..my daughter is recovering from a social anxiety disorder, and is finally getting to the stage where she can function in society.

She would love to start a business making decorated cupcakes, at which she is quite good, because she can do the bulk of it from home and ease herself back into the outside world.

We already know about the business side of things.. I run my own business from home .. and we have the room for her to do this, as well as LOTS of baking equipement, and cupcake supplies in general.  We have done responsible food handling courses, have commercial kitchens installed and various other necessaries.

But I have a couple of questions for those of you who make LOTS of cupcakes.

What piece of equipment that most 'standard' kitchens wouldnt' have do you recommend?

What is your hands down most popular cupcake design.. I don't want to steal, just an idea (eg.. girly rainbow cupcakes, little kids unisex birthdays, christenings and other formal events etc etc). Of course, if you are feeling generous enough to share pics, I would greatly appreciate it, as she is a visual learner now.

If ANYONE has any hints, tips and ideas, I would be more than grateful... we plan on starting out doing an extra table at my regular markets and fairs, and maybe taking orders from there if people want them.

Seek peace

mermaid cupcakes

  • Oct. 29th, 2009 at 11:43 AM

This was an order for a lovely young lady's 21st birthday. She requested for a mermaid and a butterfly, and two-toned frosting for the cupcakes. She didn't specify the colour for the toppers, so I just adapted them to suit the feminine white-pink feel of the set.

It's also my first time making a mermaid, and as with all my cupcakes, I opted for cute rather than sexy. However, one of my tweeps commented that she's too chubby for a mermaid ("how did she end up THIS chubby???"... mermaids are supposed to have killer curves), and it kinda got me down and worried the whole night :( But thank goodness the client also found her cute :D

What is the plastic stuff called that people often use to gift wrap cupcakes and where could i buy it? I live in the UK, and would prefer to buy it in a store. I just don't know what it's called.
